Mixed Berry Eton Mess

This mixed berry recipe can be easily served all the year round; you could add some alcohol if you wish but it is really delicious just as it is.

Ingredients Method

A bit of this, a bit of that

  • 450g mixed berry compote
  • 100ml double cream, lightly whipped
  • 200ml Onken Natural Set Yogurt
  • 75g meringue nests, broken into bite-size pieces
  • Decorate with strawberries and chopped Pistachio nuts

Step-by-step

  1. 1 In a large bowl fold together the lightly whipped cream, yogurt and meringues.
  2. 2 Gently fold in the berry compote, do not over fold as the streaking of the colours is attractive.
  3. 3 Spoon the Mixed Berry Eton Mess into 4 or 6 dessert glasses.
  4. 4 To serve top with strawberry halves and the chopped nuts.
