Strawberry Yogurt Cake with Lime Drizzle


  • 100g Onken 0% Fat Strawberry Yogurt
  • 125ml vegetable oil
  • 125g sugar
  • 2 eggs
  • Zest and juice of 1 lime
  • 2 tsp vanilla extract
  • 200g self raising flour
  • 1 tsp baking powder
  • 150g strawberries, tops removed and diced
For the lime drizzle
  • 75g icing sugar
  • Zest and juice of ½ lime
  • Strawberries and lime zest, to decorate


1.Preheat the oven to 175c. Lightly grease and line a 23cm/9” round cake pan.

2.In a large mixing bowl, beat the yogurt, oil, sugar, eggs, lime zest and juice and vanilla together well.

3.Sift in the flour and baking powder, then gently stir to combine.

4.Fold the diced strawberries into the batter.

5.Pour into the prepared pan and bake for 25-30 minutes or until a skewer inserted into the centre of the cake comes out clean.

6.Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

7.For the lime drizzle, mix the icing sugar and lime juice to get a thick drizzling consistency. If necessary to thin, add a little water, or to thicken add a little icing sugar.

8.Drizzle over the completely cooled cake, sprinkle with the lime zest and pile with strawberries.
