Onken Strawberry Eton Mess
- 450g Onken 0% Fat Strawberry Yogurt
- 450g strawberries, sliced
- 1 tbsp sugar
- a little lemon juice
- Drop of vanilla extract (optional)
- 6 ready-made meringues, crushed
1.Cut the strawberries in slices or quarters if they are small.
2.Place half the strawberries in a bowl with the sugar, lemon juice and vanilla and leave for 10 minutes so the strawberries release their juices.
3.Blitz the macerated strawberries in a blender or mash with a fork.
4.Divide the strawberry yogurt into four glasses or small bowls.
5.Top with the crushed meringues and sliced strawberries and drizzle with the strawberry pulp. Serve immediately.
